Ingredients
- 4 spring onions
- 20 g fresh ginger, sliced
- 600 ml light vegetable stock
- 1 tsp rice vinegar
- 1 tsp sesame oil
- White pepper
- Sea salt
Method
- 1Smash the white spring-onion sections and reserve the green tops.
- 2Simmer stock, onion whites and ginger, covered, for 10 minutes.
- 3Stir in vinegar and season lightly.
- 4Remove from heat, add sesame oil and sliced green tops, and serve warm.
Nutrition (approx.): ~45 kcal per serving · 1 cup (~300 ml)
