    Ingredients

    • 4 spring onions
    • 20 g fresh ginger, sliced
    • 600 ml light vegetable stock
    • 1 tsp rice vinegar
    • 1 tsp sesame oil
    • White pepper
    • Sea salt

    Method

    1. 1Smash the white spring-onion sections and reserve the green tops.
    2. 2Simmer stock, onion whites and ginger, covered, for 10 minutes.
    3. 3Stir in vinegar and season lightly.
    4. 4Remove from heat, add sesame oil and sliced green tops, and serve warm.

    Nutrition (approx.): ~45 kcal per serving · 1 cup (~300 ml)
