Cucumber, Seaweed & Sesame Salad

Cucumber clears Heat and promotes urination; seaweed softens hardness — a crisp side dish that takes the edge off a hot week.

Ingredients
- 2 large cucumbers, thinly sliced or ribboned
- 30 g dried wakame or kelp, rehydrated and drained
- 2 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 1 tsp raw honey or mirin
- 1 tbsp white sesame seeds, toasted
- Pinch of sea salt
Method
- 1Rehydrate dried seaweed in cold water for 10 minutes. Drain and squeeze out excess water. Roughly chop.
- 2Slice cucumbers thinly using a mandoline or peeler. Lightly salt and set aside for 5 minutes.
- 3Whisk together rice vinegar, sesame oil and honey.
- 4Toss cucumber ribbons and seaweed with the dressing.
- 5Sprinkle with toasted sesame seeds and serve immediately.
