    Ingredients

    • 750 g ripe watermelon flesh, seeded
    • 2 tbsp fresh lime juice
    • 1 tbsp raw honey or maple syrup
    • 10–12 fresh mint leaves

    Method

    1. 1Blend watermelon, lime juice and sweetener until completely smooth.
    2. 2Roughly tear mint leaves and stir through the purée.
    3. 3Pour into a shallow metal tray and freeze for 1 hour.
    4. 4Remove from freezer and scrape with a fork to break up ice crystals. Return to freezer.
    5. 5Repeat scraping every 30 minutes for 2–3 hours until fluffy and granular.
    6. 6Serve in chilled glasses, garnished with extra mint.
