Watermelon, Mint & Lime Granita

Watermelon (西瓜) is the archetypal Heat-clearing fruit; paired with mint it gently vents an over-bright Heart on humid evenings.

Ingredients
- 750 g ripe watermelon flesh, seeded
- 2 tbsp fresh lime juice
- 1 tbsp raw honey or maple syrup
- 10–12 fresh mint leaves
Method
- 1Blend watermelon, lime juice and sweetener until completely smooth.
- 2Roughly tear mint leaves and stir through the purée.
- 3Pour into a shallow metal tray and freeze for 1 hour.
- 4Remove from freezer and scrape with a fork to break up ice crystals. Return to freezer.
- 5Repeat scraping every 30 minutes for 2–3 hours until fluffy and granular.
- 6Serve in chilled glasses, garnished with extra mint.
