Astragalus & Chicken Congee

A warming chicken congee infused with a small culinary amount of astragalus and red dates.

Ingredients
- 100 g short-grain rice
- 180 g chicken thigh, diced
- 15 g astragalus root slices
- 5 red dates, pitted
- 3 ginger slices
- 1.2 L water
- Sea salt and white pepper
- 1 spring onion
Method
- 1Simmer astragalus and ginger in 350 ml of the water for 15 minutes, then strain.
- 2Combine the infusion, remaining water, rice and dates and simmer for 30 minutes.
- 3Add chicken and cook for 10–12 minutes until cooked through.
- 4Season and finish with spring onion; do not serve the woody root slices.
