    Ingredients

    • 250 g daikon, thinly sliced
    • 2 spring onions, white and green separated
    • 3 ginger slices
    • 650 ml light vegetable stock
    • 1 tsp light soy sauce
    • White pepper
    • 1 tsp sesame oil

    Method

    1. 1Simmer daikon and ginger in stock for 14 minutes.
    2. 2Add spring-onion whites for the final 3 minutes.
    3. 3Season with soy and white pepper.
    4. 4Remove from heat, add sesame oil and sliced green tops and serve.
