    Ingredients

    • 60 g Job's tears, soaked 2 hours
    • 50 g short-grain rice
    • 5 g aged tangerine peel, soaked and shredded
    • 3 ginger slices
    • 900 ml water
    • Sea salt
    • 1 spring onion, optional

    Method

    1. 1Drain Job's tears and combine with rice, peel, ginger and water.
    2. 2Bring to the boil, then simmer for 40 minutes, stirring occasionally.
    3. 3Add water if needed to keep a loose porridge consistency.
    4. 4Remove ginger, season lightly and garnish if desired.
