Ginger, Shiitake & Barley Bowl

Chewy barley, browned shiitake and ginger make an aromatic grain bowl for the cool autumn transition.

Ingredients
- 120 g pearl barley, soaked 1 hour
- 150 g fresh shiitake, sliced
- 15 g fresh ginger, julienned
- 1 tbsp vegetable oil
- 1 tbsp light soy sauce
- 450 ml light stock
- 1 spring onion
- 1 tsp sesame seeds
Method
- 1Drain barley and simmer in stock for about 28 minutes until tender; drain excess liquid.
- 2Sauté ginger in oil until fragrant.
- 3Add mushrooms and cook for 5 minutes until browned.
- 4Fold through barley and soy, then top with spring onion and sesame.
