Honey-Poached Pear & Lily Bulb

Snow pear, lily bulb and white fungus form a softly textured dessert for dry autumn days.

Ingredients
- 1 large Asian pear, cored and quartered
- 20 g dried lily bulb, soaked
- 10 g dried white fungus, soaked and torn
- 500 ml water
- 1 tbsp honey
- 10 goji berries
- 1 strip lemon zest, optional
Method
- 1Trim the firm base from the soaked white fungus and tear it into florets.
- 2Simmer pear, lily bulb, fungus, water and zest, covered, for 25 minutes.
- 3Add goji for the final 5 minutes.
- 4Cool slightly, stir in honey and serve warm or chilled.
