Sesame, Daikon & Steamed Egg Custard

A silky savoury custard with grated daikon and sesame, gentle enough for a simple autumn lunch.

Ingredients
- 3 eggs
- 150 g daikon, finely grated
- 200 ml warm light stock
- 1 tsp light soy sauce
- 1 tsp sesame oil
- 1 tbsp toasted white sesame
- 1 spring onion, sliced
Method
- 1Squeeze the daikon gently and reserve its liquid.
- 2Whisk eggs with stock and reserved liquid, then strain.
- 3Stir in daikon, cover and steam over medium-low heat for 12–15 minutes.
- 4Finish with soy, sesame oil, seeds and spring onion.
