    Ingredients

    • 1 free-range chicken maryland or 600 g chicken thigh, bone in
    • 20 g astragalus root slices (Huáng Qí)
    • 10 g codonopsis root (Dǎng Shēn)
    • 15 g goji berries (Gǒu Qǐ Zǐ)
    • 4 red dates (Dà Zǎo)
    • 3 slices fresh ginger
    • 1.8 L water
    • Sea salt and white pepper to taste

    Method

    1. 1Blanch the chicken for 3 minutes in boiling water, drain and rinse.
    2. 2Place chicken, astragalus, codonopsis, dates and ginger in a pot with the water.
    3. 3Bring to the boil, skim, then simmer gently for 80 minutes.
    4. 4Add goji berries for the last 10 minutes.
    5. 5Remove the woody astragalus slices, season and serve the broth and meat together.
