Astragalus, Chicken & Goji Broth

The winter broth for people who catch every cold going around — huáng qí lifts and consolidates Wèi Qì, chicken and goji rebuild the middle.

Ingredients
- 1 free-range chicken maryland or 600 g chicken thigh, bone in
- 20 g astragalus root slices (Huáng Qí)
- 10 g codonopsis root (Dǎng Shēn)
- 15 g goji berries (Gǒu Qǐ Zǐ)
- 4 red dates (Dà Zǎo)
- 3 slices fresh ginger
- 1.8 L water
- Sea salt and white pepper to taste
Method
- 1Blanch the chicken for 3 minutes in boiling water, drain and rinse.
- 2Place chicken, astragalus, codonopsis, dates and ginger in a pot with the water.
- 3Bring to the boil, skim, then simmer gently for 80 minutes.
- 4Add goji berries for the last 10 minutes.
- 5Remove the woody astragalus slices, season and serve the broth and meat together.
